Ingredients

The base

  • 2 ½ cups rolled oats
  • 1 tsp baking powder
  • 2 tbsp pumpkin pie spice
  • ¼ tsp salt

The wet ingredients

  • 1 ¾ cups almond milk
  • 2 large eggs
  • ½ cup pumpkin puree
  • cup pure maple syrup
  • 1 tsp pure vanilla extract

The mix-ins

  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F and grease an 8×8 casserole dish.
  2. In a large bowl, mix the rolled oats, baking powder, pumpkin pie spice, and salt.
  3. In a medium bowl, stir together the almond milk, eggs, pumpkin puree, maple syrup, and vanilla.
  4. Combine the wet and dry mixtures until well mixed.
  5. Fold in the chocolate chips.
  6. Pour the mixture into the baking dish and press down lightly.
  7. Sprinkle extra chocolate chips on top if desired.
  8. Bake uncovered for 40-45 minutes until lightly golden brown.
  9. Let cool for 5 minutes before serving.
