Ingredients

The base

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon pumpkin pie spice

The wet ingredients

  • 1 cup pumpkin puree
  • cups unsweetened almond milk
  • 2 egg whites (or ¼ cup)
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup

The mix-ins

  • ¼ cup raisins
  • ¼ cup chopped pecans

Instructions

  1. Preheat the oven to 375ºF and spray an 8x8-inch baking dish with cooking spray.
  2. In a medium bowl, mix together the rolled oats, baking powder, salt, and pumpkin pie spice.
  3. In a large bowl, combine the pumpkin puree, almond milk, egg whites, vanilla, maple syrup, raisins, and pecans.
  4. Add the dry oat mixture to the wet ingredients and stir until well combined.
