Instructions
- Preheat the oven to 350°F and spray a baking dish with nonstick cooking spray.
- In a bowl, mix the dry ingredients: rolled oats, ¼ cup brown sugar, cinnamon, pumpkin pie spice, and salt.
- Stir in the pumpkin, non-dairy milk, and vanilla extract until well combined.
- Pour the mixture into the prepared baking dish and top with the remaining ¼ cup brown sugar.
- Bake for 35-40 minutes until the edges pull away from the dish and a knife inserted in the center comes out clean.
