Ingredients

The base

  • cups rolled oats
  • cups pumpkin puree
  • 2 cups non-dairy milk
  • ¼ teaspoon vanilla extract

The sweeteners and spices

  • ½ cup light brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon pumpkin pie spice
  • teaspoon table salt

  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix the dry ingredients: rolled oats, ¼ cup brown sugar, cinnamon, pumpkin pie spice, and salt.
  3. Stir in the pumpkin, non-dairy milk, and vanilla extract until well combined.
  4. Pour the mixture into the prepared baking dish and top with the remaining ¼ cup brown sugar.
  5. Bake for 35-40 minutes until the edges pull away from the dish and a knife inserted in the center comes out clean.
