Instructions
- Preheat the oven to 375°F and grease a 9x9-inch baking dish.
- In a large bowl, mix the dry ingredients: oats, pumpkin pie spice, baking powder, and salt.
- Add the wet ingredients: pumpkin puree, milk, eggs, maple syrup, melted butter, and vanilla. Stir until combined.
- Pour the batter into the prepared baking dish and top with additional toasted pecans.
- Bake for 30-34 minutes until the center is set and a toothpick comes out clean.
- Let sit for 5 minutes before cutting and serving.
- Top servings with yogurt or whipped topping, maple syrup, and pumpkin pie spice.
