Instructions
- Preheat the oven to 350°F.
- Grease a baking dish or cast iron skillet with oil or butter.
- In a bowl, combine the rolled oats, sweetener, baking powder, salt, and pumpkin pie spice.
- In a separate larger mixing bowl, combine the pureed pumpkin, eggs, milk, and vanilla.
- Add the dry ingredients to the wet ingredients and stir to combine.
- Fold in the chocolate chips if using.
- Pour the mixture into the greased baking dish or skillet.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
