Ingredients

The base

  • cups rolled oats
  • ½-1 tablespoon pumpkin pie spice
  • ½ cup sweetener or sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 15.5 oz pureed pumpkin
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla

Optional add-ins

  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a baking dish or cast iron skillet with oil or butter.
  3. In a bowl, combine the rolled oats, sweetener, baking powder, salt, and pumpkin pie spice.
  4. In a separate larger mixing bowl, combine the pureed pumpkin, eggs, milk, and vanilla.
  5. Add the dry ingredients to the wet ingredients and stir to combine.
  6. Fold in the chocolate chips if using.
  7. Pour the mixture into the greased baking dish or skillet.
  8. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.
