Instructions
- Preheat the oven to 350º F and line a 12-cup muffin pan with muffin liners, lightly spraying each liner.
- In a large bowl, combine the rolled oats, monk fruit, baking powder, cinnamon, salt, and chia seeds.
- Stir in the almond milk until well combined and let rest for 5-10 minutes to allow the oats and chia seeds to absorb the milk.
- Add the sliced tart cherries and chocolate chips to the mixture and stir to combine.
- Divide the batter evenly among the muffin cups and bake for 25 minutes or until fragrant and lightly browned.
- Allow the muffins to cool completely before serving.
