Cherry Almond Baked Oatmeal Cups

Instructions
- Preheat the oven to 375°F and prepare a muffin tin.
- In a large bowl, combine almond milk, applesauce, melted butter, and almond extract.
- Add oats, coconut sugar, baking powder, cinnamon, salt, tart cherries, and almonds to the mixture and stir until combined.
- Spoon the mixture into muffin cups, filling them to the top and adding more sliced almonds on top.
- Bake for 28-30 minutes until a fork comes out clean.
- Allow to cool and store in an airtight container in the refrigerator.
