Ingredients

The base

  • 1 ½ cups unsweetened almond milk
  • ½ cup unsweetened applesauce
  • 2 tbsp butter
  • 1 tsp pure almond extract
  • 2 ½ cups old-fashioned oats
  • ¼ cup coconut sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp kosher salt

The mix-ins

  • ½ cup Montmorency tart cherries
  • cup blanched sliced almonds

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. In a large bowl, combine almond milk, applesauce, melted butter, and almond extract.
  3. Add oats, coconut sugar, baking powder, cinnamon, salt, tart cherries, and almonds to the mixture and stir until combined.
  4. Spoon the mixture into muffin cups, filling them to the top and adding more sliced almonds on top.
  5. Bake for 28-30 minutes until a fork comes out clean.
  6. Allow to cool and store in an airtight container in the refrigerator.
