Instructions
- Preheat the oven to 350ºF and line a 12-count muffin tin with muffin liners, spraying with nonstick cooking spray.
- In a large bowl, combine the rolled oats, baking powder, and spices.
- Peel and finely dice the apple, then set it aside.
- In a medium bowl, mash the banana, then mix in the eggs, maple syrup, and almond milk.
- Combine the wet mixture with the dry mixture, then add the melted coconut oil and diced apples, mixing well.
- Fill the muffin liners to the top with the oat mixture, approximately 2 heaping tablespoons each.
- Bake in the oven for 19-21 minutes.
- Let cool for 10 minutes before removing from the muffin tin, then cool completely before storing.
