Ingredients

Dry Ingredients

  • 3 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 large apple, peeled and minced

Wet Ingredients

  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 tablespoon melted coconut oil
  • 1 medium banana, mashed
  • cups unsweetened almond milk

Instructions

  1. Preheat the oven to 350ºF and line a 12-count muffin tin with muffin liners, spraying with nonstick cooking spray.
  2. In a large bowl, combine the rolled oats, baking powder, and spices.
  3. Peel and finely dice the apple, then set it aside.
  4. In a medium bowl, mash the banana, then mix in the eggs, maple syrup, and almond milk.
  5. Combine the wet mixture with the dry mixture, then add the melted coconut oil and diced apples, mixing well.
  6. Fill the muffin liners to the top with the oat mixture, approximately 2 heaping tablespoons each.
  7. Bake in the oven for 19-21 minutes.
  8. Let cool for 10 minutes before removing from the muffin tin, then cool completely before storing.
