Instructions
- Preheat the oven to 350°F.
- In a large bowl, mash the bananas, then mix in the coconut oil, egg, vanilla, and honey until smooth.
- Add the peanut butter and mix until incorporated.
- Stir in the oats, flour, salt, baking soda, and baking powder.
- Mix in the almond milk until combined.
- Scoop the batter into 12 muffin cups and top with chocolate chips and extra oats if desired.
- Bake for 16-18 minutes until a toothpick comes out clean.
