Ingredients

  • 3 whole Bananas
  • ¼ cup coconut oil
  • 1 large egg
  • 1 tsp vanilla
  • ¼ cup honey or maple syrup
  • cup Peanut Butter
  • ¼ cup rolled oats
  • cup White Whole Wheat Flour
  • ¼ tsp salt
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • ¼ cup Almond Milk
  • to taste Chocolate Chips for garnish
  • to taste Extra Oats For Garnish

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mash the bananas, then mix in the coconut oil, egg, vanilla, and honey until smooth.
  3. Add the peanut butter and mix until incorporated.
  4. Stir in the oats, flour, salt, baking soda, and baking powder.
  5. Mix in the almond milk until combined.
  6. Scoop the batter into 12 muffin cups and top with chocolate chips and extra oats if desired.
  7. Bake for 16-18 minutes until a toothpick comes out clean.
