Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- In a medium bowl, mix together the dry ingredients: flour, baking powder, baking soda, salt, and nutmeg.
- In a large bowl, combine the wet ingredients: mashed bananas, honey, melted coconut oil, egg, vanilla, peanut butter, and milk.
- Add the dry ingredients to the wet mixture and stir until just combined, avoiding overmixing.
- Scoop the batter into the muffin liners, filling them appropriately.
- Bake for 17-18 minutes until a toothpick comes out clean and the tops spring back.
- Cool the muffins on a wire rack and store them covered at room temperature.
