Ingredients

  • 2 cups white whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg or cinnamon
  • 1 ½ cups mashed bananas (about 3 large bananas)
  • cup honey
  • ¼ cup coconut oil (melted)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup creamy peanut butter
  • cup milk (can substitute almond milk)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. In a medium bowl, mix together the dry ingredients: flour, baking powder, baking soda, salt, and nutmeg.
  3. In a large bowl, combine the wet ingredients: mashed bananas, honey, melted coconut oil, egg, vanilla, peanut butter, and milk.
  4. Add the dry ingredients to the wet mixture and stir until just combined, avoiding overmixing.
  5. Scoop the batter into the muffin liners, filling them appropriately.
  6. Bake for 17-18 minutes until a toothpick comes out clean and the tops spring back.
  7. Cool the muffins on a wire rack and store them covered at room temperature.
