Ingredients

The Muffins

  • ¾ to 1 cup no-stir natural peanut butter or creamy almond butter
  • 2 bananas ripe bananas
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup honey or maple syrup
  • cup vanilla protein powder, peanut powder, or unsweetened cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Optional Toppings

  • to taste peanut butter or sliced bananas

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan.
  2. Blend the peanut butter and bananas until creamy, then mix in eggs, vanilla, and honey.
  3. In a separate bowl, whisk together the protein powder, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients, mixing until smooth without overmixing.
  5. Scoop the batter into the muffin cups, filling them about ⅔ to ¾ full, and add optional toppings if desired.
  6. Bake for 15 to 20 minutes until a toothpick comes out clean.
  7. Allow to cool slightly before serving.
