Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners and nonstick spray.
- Make homemade oat flour by grinding oatmeal in a blender and measuring it after blending.
- In a large bowl, whisk together the mashed banana, coconut oil, eggs, peanut butter, maple syrup, and vanilla until well combined.
- In a small bowl, mix the oat flour, cocoa powder, baking powder, baking soda, and salt.
- Combine the dry ingredients with the wet ingredients and stir until mixed. Fold in the chocolate chips.
- Pour the batter into the muffin tin, filling each slot about ¾ full. Add more chocolate chips on top.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
