Ingredients

  • 1 cup mashed overripe banana
  • ½ cup coconut oil
  • 2 units eggs
  • ½ cup natural peanut butter
  • cup maple syrup
  • 1 tsp vanilla
  • 2 cups homemade oat flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners and nonstick spray.
  2. Make homemade oat flour by grinding oatmeal in a blender and measuring it after blending.
  3. In a large bowl, whisk together the mashed banana, coconut oil, eggs, peanut butter, maple syrup, and vanilla until well combined.
  4. In a small bowl, mix the oat flour, cocoa powder, baking powder, baking soda, and salt.
  5. Combine the dry ingredients with the wet ingredients and stir until mixed. Fold in the chocolate chips.
  6. Pour the batter into the muffin tin, filling each slot about ¾ full. Add more chocolate chips on top.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
