Healthy Banana Chocolate Chip Muffins

Instructions
- Mix flaxseed meal with water and let it thicken for 5 minutes (if using an egg, skip this step).
- Preheat the oven to 350°F and prepare a muffin tin.
- Mash the bananas in a large bowl until mostly smooth.
- Add the flax egg (or egg), applesauce, and oil to the bananas and whisk together.
- Stir in coconut sugar, maple syrup, and vanilla.
- Sprinkle baking soda, cinnamon, and salt over the mixture and stir gently.
- Gently fold in the flour and then the chocolate chips.
- Divide the batter into the muffin cups and sprinkle reserved chocolate chips on top.
- Bake for 22 to 26 minutes until a toothpick comes out clean.
- Let cool for 5 minutes in the pan before transferring to a wire rack.
