Ingredients

  • 1 tablespoon flaxseed meal or 1 large egg
  • 3 large overripe bananas (about 11 ounces or 1 ½ cups mashed)
  • cup unsweetened applesauce
  • 2 tablespoons canola oil or melted cooled coconut oil
  • cup coconut sugar or light brown sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 ½ cups white whole wheat flour
  • ½ cup dark chocolate chips (mini or regular)

Instructions

  1. Mix flaxseed meal with water and let it thicken for 5 minutes (if using an egg, skip this step).
  2. Preheat the oven to 350°F and prepare a muffin tin.
  3. Mash the bananas in a large bowl until mostly smooth.
  4. Add the flax egg (or egg), applesauce, and oil to the bananas and whisk together.
  5. Stir in coconut sugar, maple syrup, and vanilla.
  6. Sprinkle baking soda, cinnamon, and salt over the mixture and stir gently.
  7. Gently fold in the flour and then the chocolate chips.
  8. Divide the batter into the muffin cups and sprinkle reserved chocolate chips on top.
  9. Bake for 22 to 26 minutes until a toothpick comes out clean.
  10. Let cool for 5 minutes in the pan before transferring to a wire rack.
