Ingredients

  • 1 ½ cups all-purpose flour
  • cup white sugar
  • ½ tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 bananas very ripe (about 1 ⅓ cups mashed)
  • 1 large egg
  • cup butter (softened to room temperature)
  • 1 tsp vanilla extract
  • ½ cup chocolate chips
  • ½ cup chopped nuts (such as pistachios, optional)

Instructions

  1. 1. Preheat the oven to 375°F and prepare a muffin tin by greasing it or lining it with muffin papers.
  2. 2. In a mixing bowl, combine the flour, sugar, cinnamon, baking powder, baking soda, and salt.
  3. 3. In a separate bowl, peel and mash the bananas until you have about 1 ⅓ cups.
  4. 4. Add the egg, softened butter, and vanilla extract to the mashed bananas and mix until well combined.
  5. 5. Fold the dry ingredients into the banana mixture, then gently fold in the chocolate chips and nuts if using.
  6. 6. Pour the batter into the muffin tins, filling each about ⅔ full.
  7. 7. Bake for 18–20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
