Ingredients

The batter

  • 1 large egg
  • 1 cup mashed banana
  • ¼ cup granulated white sugar
  • 2 tablespoons skim milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons light butter, melted
  • 1 ½ cups all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

The topping

  • 2 tablespoons mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin with cooking spray.
  2. In a mixing bowl, combine the egg, mashed banana, sugar, milk, and vanilla extract, then mix well.
  3. Add the melted butter to the wet mixture and stir until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Combine the dry ingredients with the wet ingredients and mix until a batter forms.
  6. Spoon the batter into the muffin tin and sprinkle mini chocolate chips on top.
  7. Bake in the preheated oven for 18-20 minutes.
