Ingredients

The muffins

  • 1 medium-to-large over-ripe banana
  • 3 tablespoons unsalted butter, melted
  • ¼ cup brown sugar
  • 1 large egg white
  • ½ teaspoon vanilla extract
  • cup all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • 2 ounces semi-sweet chocolate, chopped

Special tools

  • 5 pieces muffin liners
  • 1 piece fine-mesh strainer

Instructions

  1. Preheat the oven to 425°F and line a muffin tin with muffin liners.
  2. Mash the banana in a bowl and mix in melted butter until combined.
  3. Add brown sugar, egg white, and vanilla to the banana mixture and mix well.
  4. Sift the flour, cocoa powder, baking soda, and salt into the bowl using a fine-mesh strainer and mix until just combined.
  5. Stir in the chopped chocolate or chocolate chips.
  6. Divide the batter among the muffin cups, filling them about ¾ full.
  7. Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for an additional 6 to 9 minutes.
  8. Cool in the pan for at least 10 minutes before enjoying.
