Instructions
- Preheat the oven to 425°F and line a muffin tin with muffin liners.
- Mash the banana in a bowl and mix in melted butter until combined.
- Add brown sugar, egg white, and vanilla to the banana mixture and mix well.
- Sift the flour, cocoa powder, baking soda, and salt into the bowl using a fine-mesh strainer and mix until just combined.
- Stir in the chopped chocolate or chocolate chips.
- Divide the batter among the muffin cups, filling them about ¾ full.
- Bake at 425°F for 8 minutes, then reduce the temperature to 350°F and bake for an additional 6 to 9 minutes.
- Cool in the pan for at least 10 minutes before enjoying.
