Chocolate Banana Muffins

Instructions
- Melt the coconut oil and let it cool to room temperature.
- Preheat the oven to 325°F and prepare a muffin pan with liners and nonstick spray.
- In a bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, espresso powder, and salt.
- In another bowl, mash the bananas and whisk in the eggs, milk, honey, brown sugar, vanilla, and oil.
- Combine the wet and dry ingredients, stirring gently until just mixed, then fold in the chocolate chips.
- Scoop the batter into the muffin pan, filling each cup almost to the top and adding more chocolate chips on top if desired.
- Bake for 22 to 26 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the pan for 3 minutes before transferring to a wire rack to cool completely.
