Chocolate Banana Muffins

Ingredients

  • cup coconut oil or canola oil
  • 2 cups white whole wheat flour
  • cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon espresso powder (optional)
  • ½ teaspoon kosher salt
  • 1 cup mashed ripe banana (about 3 medium-large bananas)
  • 2 large eggs
  • ¾ cup milk (any kind)
  • cup honey
  • ¼ cup coconut sugar or light brown sugar
  • 2 teaspoons pure vanilla extract
  • ½ cup dark chocolate chips (plus additional for sprinkling on top)

Instructions

  1. Melt the coconut oil and let it cool to room temperature.
  2. Preheat the oven to 325°F and prepare a muffin pan with liners and nonstick spray.
  3. In a bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, espresso powder, and salt.
  4. In another bowl, mash the bananas and whisk in the eggs, milk, honey, brown sugar, vanilla, and oil.
  5. Combine the wet and dry ingredients, stirring gently until just mixed, then fold in the chocolate chips.
  6. Scoop the batter into the muffin pan, filling each cup almost to the top and adding more chocolate chips on top if desired.
  7. Bake for 22 to 26 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the pan for 3 minutes before transferring to a wire rack to cool completely.
