Ingredients

  • 3 medium over-ripe bananas
  • 2 large eggs
  • cup pure maple syrup
  • ¼ cup avocado oil
  • 1 tsp vanilla extract
  • 1 ¼ cups packed super fine blanched almond flour
  • ¾ cup oat flour
  • ½ cup cocoa or cacao powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp fine sea salt
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a muffin tin.
  2. In a medium bowl, whisk together the bananas, eggs, maple syrup, oil, and vanilla until smooth.
  3. In a large bowl, combine the almond flour, oat flour, cocoa powder, baking soda, baking powder, and salt.
  4. Add the wet ingredients to the dry ingredients and mix until smooth, then fold in the chocolate chips.
  5. Spoon the mixture evenly into the muffin tin and bake for about 24 minutes.
  6. Allow the muffins to cool in the pan for 15 minutes before transferring to a wire rack.
