Ingredients

  • 1 large egg
  • 2 pieces ripe bananas
  • ½ cup sugar
  • 1 tsp vanilla
  • cups oat flour
  • cup unsweetened cocoa powder
  • ¼ tsp salt
  • ¼ cup almond milk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixer, combine the bananas, egg, sugar, and vanilla until smooth.
  3. Gradually mix in the oat flour and cocoa powder in batches.
  4. Add salt, almond milk, baking soda, and baking powder, and mix until combined.
  5. Fold in the chocolate chips.
  6. Prepare a muffin pan with muffin cups and spray them lightly with cooking spray.
  7. Scoop the batter into the cups, filling them ¾ full.
  8. Top each muffin with 3-4 additional chocolate chips.
  9. Bake for 15-17 minutes, checking for doneness with a toothpick.
  10. Allow to cool on a wire rack before serving.
