Ingredients

Dry Ingredients

  • 1.75 cups white whole wheat flour
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup dark chocolate chips

Wet Ingredients

  • 1 cup mashed banana (about 2 large bananas)
  • 2 large eggs
  • ¾ cup unsweetened almond milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut oil (melted)

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with liners or spray with coconut oil.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a medium bowl, mash the bananas and then whisk in the eggs, almond milk, and vanilla.
  4. Combine the wet and dry ingredients until smooth, then mix in the melted coconut oil.
  5. Transfer the batter into the muffin tin, filling each cup nearly to the top and adding extra chocolate chips on top.
  6. Bake for 20-23 minutes, or until a toothpick inserted comes out clean.
