Instructions
- Preheat the oven to 350ºF and line a muffin tin with liners or spray with coconut oil.
- In a large bowl, whisk together the dry ingredients.
- In a medium bowl, mash the bananas and then whisk in the eggs, almond milk, and vanilla.
- Combine the wet and dry ingredients until smooth, then mix in the melted coconut oil.
- Transfer the batter into the muffin tin, filling each cup nearly to the top and adding extra chocolate chips on top.
- Bake for 20-23 minutes, or until a toothpick inserted comes out clean.
