Ingredients

  • 4 tablespoons ground flaxseed
  • 4 tablespoons warm water
  • cups whole wheat pastry flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • cup almond milk
  • 1 tablespoon apple cider vinegar
  • cup maple syrup
  • cup olive oil
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe banana
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and grease a 12-cup muffin tin.
  2. Combine flaxseed and warm water in a small bowl and let thicken for 5 minutes.
  3. In a large bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. In a medium bowl, combine almond milk, apple cider vinegar, maple syrup, olive oil, and vanilla; stir and add the flaxseed mixture.
  5. Add the wet ingredients to the dry ingredients and stir until just combined, then fold in mashed banana and chocolate chips.
  6. Scoop the batter into the muffin tin using a ⅓ cup measure.
  7. Bake for 18 to 20 minutes until a toothpick comes out almost clean, then cool for 15 minutes before transferring to a wire rack.
