Instructions
- Preheat the oven to 350°F and grease a 12-cup muffin tin.
- Combine flaxseed and warm water in a small bowl and let thicken for 5 minutes.
- In a large bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In a medium bowl, combine almond milk, apple cider vinegar, maple syrup, olive oil, and vanilla; stir and add the flaxseed mixture.
- Add the wet ingredients to the dry ingredients and stir until just combined, then fold in mashed banana and chocolate chips.
- Scoop the batter into the muffin tin using a ⅓ cup measure.
- Bake for 18 to 20 minutes until a toothpick comes out almost clean, then cool for 15 minutes before transferring to a wire rack.
