Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners or nonstick spray.
- In a large bowl, mash the ripe bananas until smooth.
- Add the eggs, maple syrup, and almond milk to the mashed bananas and whisk together.
- Incorporate the dry ingredients into the wet mixture and mix until combined.
- Stir in the melted coconut oil until fully mixed.
- Divide the batter evenly among the 12 muffin cups, filling each about ⅔ full.
- Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for at least 10 minutes before transferring to a cooling rack.
