Ingredients

Dry Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup white whole wheat flour
  • ½ cup light brown sugar
  • 1 teaspoon baking soda

Wet Ingredients

  • 1 cup mashed banana (about 2 medium ripe bananas)
  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners or nonstick spray.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, maple syrup, and almond milk to the mashed bananas and whisk together.
  4. Incorporate the dry ingredients into the wet mixture and mix until combined.
  5. Stir in the melted coconut oil until fully mixed.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ⅔ full.
  7. Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for at least 10 minutes before transferring to a cooling rack.
