Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Wet Ingredients

  • ¾ cup light brown sugar
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 3 medium mashed ripe bananas
  • 2 large eggs
  • ¼ cup maple syrup
  • ½ cup Greek yogurt
  • ¼ cup unsweetened almond milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the dry ingredients together.
  3. In another bowl, cream together the butter and brown sugar.
  4. Add the eggs, mashed bananas, maple syrup, Greek yogurt, and vanilla extract to the butter mixture and mix well.
  5. Combine the wet and dry ingredients, stirring until just mixed.
  6. Add the almond milk to thin the batter if necessary.
  7. Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool before serving.
