Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the dry ingredients together.
- In another bowl, cream together the butter and brown sugar.
- Add the eggs, mashed bananas, maple syrup, Greek yogurt, and vanilla extract to the butter mixture and mix well.
- Combine the wet and dry ingredients, stirring until just mixed.
- Add the almond milk to thin the batter if necessary.
- Pour the batter into the prepared muffin tin, filling each cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool before serving.
