Ingredients

  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 3 medium-sized ripe bananas, mashed
  • 6 tbsp melted coconut oil or vegan butter
  • cup brown sugar
  • 1 serving egg replacement
  • 1 tsp vanilla
  • 2 tbsp almond milk

Instructions

  1. Preheat the oven to 425°F.
  2. Grease the muffin tin liners with coconut oil spray.
  3. In a large bowl, mix the all-purpose flour, almond flour, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, mash the bananas and whisk in the melted oil or butter, brown sugar, egg replacement, vanilla, and almond milk.
  5. Combine the dry and wet ingredients, stirring until well mixed.
  6. Dollop the batter into the muffin cups.
  7. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 15 minutes.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
