Ingredients

Dry Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Wet Ingredients

  • ¼ cup light brown sugar
  • ¼ cup unsalted butter
  • 2 teaspoons vanilla extract
  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup plain Greek yogurt
  • ¼ cup unsweetened almond milk

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with liners.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter, brown sugar, and vanilla until fluffy.
  4. Add the eggs, mashed bananas, maple syrup, Greek yogurt, and almond milk to the mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fill the muffin wells generously, about 3/4 to the top.
  7. Bake for 23-25 minutes or until a toothpick comes out clean.
  8. Let the muffins cool for at least 10 minutes before serving.
