Instructions
- Preheat the oven to 350ºF and line a muffin tin with liners.
- In a bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the butter, brown sugar, and vanilla until fluffy.
- Add the eggs, mashed bananas, maple syrup, Greek yogurt, and almond milk to the mixture and mix until combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fill the muffin wells generously, about 3/4 to the top.
- Bake for 23-25 minutes or until a toothpick comes out clean.
- Let the muffins cool for at least 10 minutes before serving.
