Ingredients

Wet Ingredients

  • 1 cup mashed ripe bananas
  • 2 large eggs
  • ¼ cup granulated sugar
  • ¾ cup brown sugar
  • cup sour cream or yogurt
  • 1 ½ teaspoons vanilla extract
  • ½ cup brown butter

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 400 °F and line a muffin pan with paper liners.
  2. In a small bowl, whisk together the mashed bananas, eggs, both sugars, sour cream, and vanilla extract.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. Gradually add the wet ingredients to the dry ingredients and mix until combined.
  5. Pour in the brown butter and mix thoroughly, scraping down the sides.
  6. Pour the mixture into the prepared muffin tin.
  7. Bake for about 12 minutes, or until a toothpick inserted comes out clean.
  8. Let the muffins rest for 10 minutes before serving.
