Ingredients

  • 2 cups all-purpose or whole wheat flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon (optional)
  • ½ teaspoon salt
  • 2 to 2 ¼ cups mashed bananas (about 4-5 medium bananas)
  • 1 cup light brown sugar
  • ½ cup melted butter or neutral-flavored oil
  • ¼ cup sour cream or plain yogurt
  • 2 tablespoons milk
  • 2 large eggs
  • 1 ½ cups add-ins (chocolate chips, nuts, etc., optional)

Instructions

  1. Preheat the oven to 375°F and prepare muffin tins.
  2. In a large bowl, whisk together the dry ingredients.
  3. In a medium bowl, combine the wet ingredients until well mixed.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Scoop the batter into the muffin tins, filling them 2/3 full.
  6. Bake for 15-17 minutes until a toothpick comes out clean.
  7. Let the muffins cool for a few minutes before transferring to a wire rack.
