Banana Nut Muffins

Ingredients

  • 4 pieces overripe bananas, peeled, divided
  • 2 cups all-purpose flour
  • ¾ cup unsalted butter, melted and cooled
  • 2 pieces eggs
  • 1 cup sugar
  • teaspoons baking soda
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons sour cream or yogurt
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 375°F (190°C) and grease 15 cups in two regular muffin pans.
  2. Mash 2 of the bananas in a small bowl, leaving some texture, and set aside.
  3. In a large bowl, combine flour, butter, eggs, sugar, baking soda, salt, vanilla extract, sour cream or yogurt, and the remaining 2 bananas. Beat until well combined.
  4. Fold in the chopped walnuts and the mashed bananas.
  5. Spoon the batter into each muffin cup.
  6. Bake for 18-20 minutes, or until the tops turn golden brown.
