Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying them with cooking spray.
- In a medium bowl, mix the dry ingredients together.
- Add the wet ingredients (except the coconut oil) to the dry ingredients and mix.
- Incorporate the melted coconut oil and mix again.
- Fill each muffin cup about ¾ full and sprinkle with additional chopped walnuts if desired.
- Bake in the oven for 20-24 minutes until the center is fully cooked.
- Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
