Ingredients

Dry Ingredients

  • 1.5 cups white whole wheat flour
  • ½ cup coconut sugar
  • ½ cup chopped walnuts
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • teaspoon salt

Wet Ingredients

  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil
  • 1 cup mashed banana
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, spraying them with cooking spray.
  2. In a medium bowl, mix the dry ingredients together.
  3. Add the wet ingredients (except the coconut oil) to the dry ingredients and mix.
  4. Incorporate the melted coconut oil and mix again.
  5. Fill each muffin cup about ¾ full and sprinkle with additional chopped walnuts if desired.
  6. Bake in the oven for 20-24 minutes until the center is fully cooked.
  7. Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
