Ingredients

  • 3 large eggs
  • ¼ cup coconut oil
  • 2 medium bananas
  • 3 pieces dates (remove pits)
  • 10 drops stevia
  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup walnuts, toasted and chopped

Instructions

  1. Blend eggs, coconut oil, bananas, dates, and stevia until combined.
  2. Add coconut flour, salt, and baking soda, and blend until smooth.
  3. Fold in the chopped walnuts.
  4. Scoop ¼ cup of batter into a paper-lined muffin pan.
  5. Bake at 350°F for 20-25 minutes, until a toothpick comes out clean.
  6. Cool and serve.
