Ingredients

  • 3 large eggs
  • ¼ cup coconut oil
  • 2 medium bananas
  • 3 pieces dates (remove pits)
  • 10 drops stevia
  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup walnuts, toasted and chopped

Instructions

  1. Blend eggs, coconut oil, bananas, dates, and stevia until combined.
  2. Add coconut flour, salt, and baking soda; blend until smooth.
  3. Fold in the walnuts.
  4. Scoop ¼ cup of batter into a paper-lined muffin pan.
  5. Bake at 350°F for 20-25 minutes until done.
  6. Cool and serve.
