Instructions
- Preheat the oven to 350°F and prepare a muffin pan with liners or grease it.
- In a bowl, mash the banana thoroughly.
- Add sugar, egg white, and oil to the mashed banana and mix until just combined.
- Incorporate flour, baking powder, baking soda, salt, cinnamon, and nutmeg into the mixture until just combined.
- If using, fold in chocolate chips.
- Divide the batter among the muffin cups, filling each about ⅔ full.
- Bake for 18 to 25 minutes or until a toothpick comes out mostly clean.
- Cool in the pan for a few minutes before transferring to a cooling rack.
