Ingredients

  • 1 large very ripe banana
  • ¼ cup granulated sugar
  • 1 large egg white
  • 1 tablespoon vegetable oil
  • 2 teaspoons vegetable oil
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoon salt
  • teaspoon cinnamon
  • a pinch nutmeg
  • cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin pan with liners or grease it.
  2. In a bowl, mash the banana thoroughly.
  3. Add sugar, egg white, and oil to the mashed banana and mix until just combined.
  4. Incorporate flour, baking powder, baking soda, salt, cinnamon, and nutmeg into the mixture until just combined.
  5. If using, fold in chocolate chips.
  6. Divide the batter among the muffin cups, filling each about ⅔ full.
  7. Bake for 18 to 25 minutes or until a toothpick comes out mostly clean.
  8. Cool in the pan for a few minutes before transferring to a cooling rack.
