Instructions
- Preheat oven to 425°F and line a muffin tin with paper liners. Mash bananas and mix with oil and melted butter. Stir in sugars, then add eggs, buttermilk, and vanilla. In a separate bowl, combine dry ingredients. Fold dry ingredients into wet mixture. Portion batter into muffin tin, filling each liner ¾ full. Prepare streusel topping if using, and sprinkle over muffins. Bake at 425°F for 8 minutes, then reduce to 350°F and bake for another 7-8 minutes. Allow muffins to cool before serving.
