Instructions
- Preheat the oven to 350ºF and prepare a muffin tin with liners or cooking spray.
- In a medium bowl, whisk together the dry ingredients.
- In a large bowl, whisk together the wet ingredients except for the melted coconut oil.
- Combine the dry ingredients with the wet ingredients until mixed.
- Stir in the melted coconut oil and mix the batter again.
- Fill each muffin cup about ⅔ full with batter.
- Bake in the preheated oven for 16-18 minutes until fully cooked.
