Ingredients

Wet Ingredients

  • ½ cup all-natural almond butter
  • 2 large eggs
  • 2 large ripe bananas
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened almond milk
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • cups white whole wheat flour
  • 1 teaspoon baking soda
  • teaspoon salt
  • ½ cup coconut sugar

Instructions

  1. Preheat the oven to 350ºF and prepare a muffin tin with liners or cooking spray.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In a large bowl, whisk together the wet ingredients except for the melted coconut oil.
  4. Combine the dry ingredients with the wet ingredients until mixed.
  5. Stir in the melted coconut oil and mix the batter again.
  6. Fill each muffin cup about ⅔ full with batter.
  7. Bake in the preheated oven for 16-18 minutes until fully cooked.
