Instructions
- Preheat the oven to 180C/350F and prepare a muffin tin with liners.
- Mix the dry ingredients in a bowl.
- In a blender, combine bananas, egg, maple syrup, and vanilla, then blend until smooth.
- Combine the wet and dry ingredients, adding chocolate chips if desired.
- Pour the batter into the muffin liners and top with flaked almonds.
- Bake for 18-20 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
