Ingredients

The muffins

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 3 large bananas
  • 1 large egg
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract

Optional toppings

  • ½ cup chocolate chips
  • 2 tablespoons flaked almonds

Instructions

  1. Preheat the oven to 180C/350F and prepare a muffin tin with liners.
  2. Mix the dry ingredients in a bowl.
  3. In a blender, combine bananas, egg, maple syrup, and vanilla, then blend until smooth.
  4. Combine the wet and dry ingredients, adding chocolate chips if desired.
  5. Pour the batter into the muffin liners and top with flaked almonds.
  6. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
