Instructions
- Preheat the oven to 350°F (180°C) and prepare a muffin pan with liners or grease it.
- In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
- In a medium bowl, mash the ripe bananas until almost smooth.
- Mix the eggs, monk fruit, and vanilla into the mashed bananas until combined.
- Combine the wet and dry ingredients, stirring until just mixed, then fold in half of the chocolate chips.
- Divide the batter into the muffin cups and sprinkle the remaining chocolate chips on top.
- Bake for 20-22 minutes or until golden brown and puffed.
- Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
