Ingredients

  • cup blanched almond flour
  • teaspoon baking powder
  • ¼ teaspoon sea salt
  • ½ teaspoon baking soda
  • 3 pieces ripe bananas
  • 2 pieces large eggs
  • 3 tablespoon monk fruit blend
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a muffin pan with liners or grease it.
  2. In a large bowl, whisk together the almond flour, baking powder, baking soda, and salt.
  3. In a medium bowl, mash the ripe bananas until almost smooth.
  4. Mix the eggs, monk fruit, and vanilla into the mashed bananas until combined.
  5. Combine the wet and dry ingredients, stirring until just mixed, then fold in half of the chocolate chips.
  6. Divide the batter into the muffin cups and sprinkle the remaining chocolate chips on top.
  7. Bake for 20-22 minutes or until golden brown and puffed.
  8. Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
