Ingredients

The muffins

  • 2 whole ripe bananas (mashed)
  • cups blanched almond flour
  • 4 large eggs
  • ¼ cup maple syrup (or honey)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup olive oil (or other oil)

Optional add-ins

  • ½ cup mini chocolate chips
  • 1 cup fresh berries

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with 12 liners.
  2. Mash the bananas until smooth and add to a large bowl.
  3. Add the almond flour, eggs, maple syrup or honey, baking powder, salt, vanilla, and oil to the bowl and mix until smooth.
  4. Fold in any optional add-ins like chocolate chips or berries.
  5. Use a heaping ¼ cup measure to scoop the batter into each muffin liner.
  6. Bake until the tops are lightly golden, about 25 minutes.
  7. Let the muffins cool completely before serving.
