Ingredients

The muffins

  • 2 cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • ¼ cup chopped walnuts
  • 2 pieces ripe bananas, peeled and mashed
  • ¼ cup maple syrup
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract

For preparation

Instructions

  1. Preheat the oven to 400°F and spray a muffin tin with nonstick cooking spray.
  2. In a large bowl, whisk together the almond flour, baking powder, baking soda, cinnamon, sea salt, and walnuts.
  3. In a separate bowl, combine the mashed bananas, maple syrup, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. Divide the batter between the muffin wells.
  6. Bake for 25-28 minutes until the tops are golden brown.
  7. Let the muffins cool in the tin for 10 minutes before transferring to a serving plate.
