Ingredients

  • 1 ¼ cups mashed very overripe bananas (about 3 medium)
  • 2 large eggs
  • cup pure maple syrup
  • ¼ cup avocado oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 ¼ cups packed almond flour
  • 1 ¼ cups certified GF oat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp fine sea salt
  • ½ cup chocolate chips or dark chocolate chunks (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Mash the bananas in a large bowl and whisk in the eggs, maple syrup, oil, and vanilla until combined.
  3. Add the almond flour, oat flour, baking soda, baking powder, cinnamon, and salt, and mix until just incorporated. If using, fold in the chocolate chips.
  4. Spoon the batter evenly into the muffin tin and bake for about 25 minutes, or until a toothpick comes out almost clean.
  5. Allow the muffins to cool in the tin for 15 minutes before transferring them to a wire rack to cool completely.
