Instructions
- Preheat the oven to 350°F and grease a muffin pan.
- In a small bowl, mash the bananas and mix with sour cream, eggs, almond extract, and vanilla extract until smooth.
- In a separate bowl, combine all dry ingredients: cake flour, sugar, baking powder, baking soda, and salt.
- Add the butter to the dry mixture and blend until fully incorporated.
- Gradually add the wet ingredients to the dry mixture and mix for about 2 minutes.
- Fold in the coconut flakes.
- In another bowl, mix the chocolate paste with half of the cake batter until well combined.
- Scoop about 2 tablespoons of banana batter and chocolate batter into each muffin cup, totaling about 4 tablespoons per muffin.
- Bake for 15-18 minutes, then remove and cool.
