Ingredients

  • 2 large bananas
  • ½ cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups sifted cake flour
  • ¾ cup sugar
  • ¾ teaspoon baking soda
  • teaspoons baking powder
  • ½ teaspoon salt
  • 6 ounces butter
  • ¼ cup chocolate paste (Nutella or similar)
  • ¾ cup toasted sweetened coconut flakes

Instructions

  1. Preheat the oven to 350°F and grease a muffin pan.
  2. In a small bowl, mash the bananas and mix with sour cream, eggs, almond extract, and vanilla extract until smooth.
  3. In a separate bowl, combine all dry ingredients: cake flour, sugar, baking powder, baking soda, and salt.
  4. Add the butter to the dry mixture and blend until fully incorporated.
  5. Gradually add the wet ingredients to the dry mixture and mix for about 2 minutes.
  6. Fold in the coconut flakes.
  7. In another bowl, mix the chocolate paste with half of the cake batter until well combined.
  8. Scoop about 2 tablespoons of banana batter and chocolate batter into each muffin cup, totaling about 4 tablespoons per muffin.
  9. Bake for 15-18 minutes, then remove and cool.
