Instructions
- Preheat the oven to 350ºF and grease a mini muffin pan.
- Mash the banana in a large bowl until smooth.
- Add eggs, maple syrup, olive oil, vanilla extract, oat flour, baking powder, and salt to the bowl and stir until the batter is smooth.
- Fold in the mini chocolate chips.
- Divide the batter among the 24 mini muffin cups.
- Bake for 12 to 14 minutes until the tops feel firm.
- Let the muffins cool in the pan for at least 15 minutes before removing.
