Instructions
- Preheat the oven to 350°F and line a muffin tin with liners and nonstick spray.
- In a large bowl, mash the bananas until smooth, then whisk in the melted coconut oil, eggs, maple syrup, and vanilla.
- In a separate small bowl, mix together the oat flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients until fully combined, then stir in the chocolate chips, reserving some for topping.
- Let the batter rest for 5 minutes.
- Scoop the batter into the muffin tin, filling each cup ¾ full, and sprinkle the reserved chocolate chips on top.
- Bake for 21-23 minutes or until a toothpick inserted comes out clean.
- Allow to cool for 10 minutes before serving.
