Ingredients

  • 1 cup mashed ripe banana
  • ½ cup melted coconut oil
  • 2 large eggs
  • cup maple syrup
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with liners and nonstick spray.
  2. In a large bowl, mash the bananas until smooth, then whisk in the melted coconut oil, eggs, maple syrup, and vanilla.
  3. In a separate small bowl, mix together the oat flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients until fully combined, then stir in the chocolate chips, reserving some for topping.
  5. Let the batter rest for 5 minutes.
  6. Scoop the batter into the muffin tin, filling each cup ¾ full, and sprinkle the reserved chocolate chips on top.
  7. Bake for 21-23 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool for 10 minutes before serving.
