Instructions
- Preheat the oven to 350ºF and line a muffin tin with 12 muffin liners.
- Blend the bananas, eggs, olive oil, oats, sugar, cinnamon, baking powder, and salt until smooth.
- Pour the batter into the muffin cups, filling them about ¾ full, and add optional toppings if desired.
- Bake for 25 minutes or until the muffins feel firm in the center.
- Allow the muffins to cool completely before serving.
