Instructions
- Preheat the oven to 425°F (218°C) and prepare a muffin pan.
- Mash the bananas in a bowl and mix in honey, egg, coconut oil, and vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- Combine the wet and dry ingredients, then fold in the chocolate chips.
- Spoon the batter into the muffin cups, filling them to the top.
- Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for another 15-17 minutes.
- Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack.
