Ingredients

  • cups mashed bananas
  • cup honey
  • 1 large egg
  • ¼ cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. Mash the bananas in a bowl and mix in honey, egg, coconut oil, and vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  4. Combine the wet and dry ingredients, then fold in the chocolate chips.
  5. Spoon the batter into the muffin cups, filling them to the top.
  6. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for another 15-17 minutes.
  7. Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack.
