Instructions
- Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
- In a medium bowl, mix the dry ingredients.
- In a large bowl, mash the bananas and measure out 1 cup.
- Whisk the eggs into the mashed banana, then add the maple syrup, peanut butter, vanilla extract, and almond milk, mixing until combined.
- Add the dry ingredients to the wet ingredients and mix, then incorporate the melted coconut oil.
- Fill each muffin liner about ¾ full and sprinkle additional chocolate chips on top.
- Bake for 18-22 minutes or until a toothpick comes out clean from the center.
- Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
