Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ½ cup coconut sugar
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • teaspoon salt
  • ½ cup chocolate chips

Wet Ingredients

  • 1 cup mashed banana
  • 2 large eggs
  • cup maple syrup
  • cup all-natural drippy peanut butter
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened plain almond milk
  • 2 tablespoons melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and line a muffin tin with muffin liners, optionally spraying them with cooking spray.
  2. In a medium bowl, mix the dry ingredients.
  3. In a large bowl, mash the bananas and measure out 1 cup.
  4. Whisk the eggs into the mashed banana, then add the maple syrup, peanut butter, vanilla extract, and almond milk, mixing until combined.
  5. Add the dry ingredients to the wet ingredients and mix, then incorporate the melted coconut oil.
  6. Fill each muffin liner about ¾ full and sprinkle additional chocolate chips on top.
  7. Bake for 18-22 minutes or until a toothpick comes out clean from the center.
  8. Let the muffins cool for 5 minutes before removing them from the tin to cool completely.
