Ingredients

The Muffin Base

  • 1 cup whole wheat pastry flour
  • ½ cup almond flour
  • cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp fine sea salt

Wet Ingredients

  • ½ cup milk of choice
  • ½ cup pure maple syrup
  • 2 large eggs
  • ¼ cup avocado oil
  • 1 ½ tsp vanilla extract

Add-ins

  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 425°F and grease a muffin tin.
  2. In a large bowl, mix the dry ingredients: whole wheat flour, almond flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: milk, maple syrup, oil, eggs, and vanilla.
  4. Combine the wet and dry ingredients, stirring until just mixed. Fold in the chocolate chips.
  5. Spoon the batter into the muffin cups and top with additional chocolate chips if desired.
  6. Bake for 8 minutes at 425°F, then reduce the temperature to 350°F and bake for another 9-10 minutes until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack.
