Healthy Chocolate Muffins

Instructions
- Preheat the oven to 180C/350F and line a muffin tin with liners.
- Prepare the flax egg by combining ground flaxseed with water and letting it sit for 10 minutes.
- In a blender, combine all ingredients except chocolate chips and blend until smooth.
- Fold in the chocolate chips gently.
- Distribute the batter into muffin liners, top with extra chocolate chips, and bake for 18-20 minutes.
- Let the muffins cool for 5 minutes before transferring to a wire rack.
