Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 2 ¼ cups rolled oats
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup maple syrup
  • 1 ½ cups milk
  • ¼-½ cup chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and line a muffin tin with liners.
  2. Prepare the flax egg by combining ground flaxseed with water and letting it sit for 10 minutes.
  3. In a blender, combine all ingredients except chocolate chips and blend until smooth.
  4. Fold in the chocolate chips gently.
  5. Distribute the batter into muffin liners, top with extra chocolate chips, and bake for 18-20 minutes.
  6. Let the muffins cool for 5 minutes before transferring to a wire rack.
