Ingredients

Dry Ingredients

  • ½ teaspoon salt

Wet Ingredients

  • 2 large eggs
  • ¾ cup full fat sour cream or plain yogurt
  • ½ cup vegetable oil
  • ½ cup whole milk
  • teaspoons pure vanilla extract

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a muffin pan.
  2. In a large bowl, whisk together the dry ingredients.
  3. In another bowl, whisk together the wet ingredients until combined.
  4. Combine the wet and dry ingredients, mixing gently to avoid overmixing.
  5. Fill the muffin liners to the top with batter.
  6. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F (177°C) and bake for an additional 15-16 minutes.
  7. Cool the muffins in the pan for 10 minutes, then transfer to a wire rack.
