Ingredients

  • 6 tablespoons unsalted butter
  • 4 ounces bittersweet dark chocolate, roughly chopped
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brewed coffee at room temperature
  • cup yogurt
  • 1 large egg
  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat the oven to 375°F and prepare a muffin pan with nonstick spray or paper liners.
  2. Melt the butter and half of the chocolate in a heat-proof bowl over simmering water, then let cool.
  3. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Combine the cooled chocolate mixture with coffee, yogurt, egg, and vanilla, then mix into the dry ingredients until just combined.
  5. Stir in the remaining chocolate chunks.
  6. Divide the batter among the muffin cups and bake for 16-20 minutes.
  7. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
