Instructions
- Preheat the oven to 375°F and prepare a muffin pan with nonstick spray or paper liners.
- Melt the butter and half of the chocolate in a heat-proof bowl over simmering water, then let cool.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Combine the cooled chocolate mixture with coffee, yogurt, egg, and vanilla, then mix into the dry ingredients until just combined.
- Stir in the remaining chocolate chunks.
- Divide the batter among the muffin cups and bake for 16-20 minutes.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
