Ingredients

Dry Ingredients

  • 1 cup white whole wheat flour
  • 2 tablespoons unsweetened cocoa powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon instant espresso powder
  • ¼ teaspoon kosher salt
  • teaspoon ground cinnamon
  • ½ cup semi-sweet chocolate chips

Wet Ingredients

  • 2 large eggs
  • ½ cup nonfat plain Greek yogurt
  • ½ cup honey or pure maple syrup
  • cup unsweetened almond milk
  • ¼ cup canola oil or melted coconut oil
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 325°F and prepare a muffin tin with nonstick spray or liners.
  2. In a large bowl, whisk together the dry ingredients and then stir in the chocolate chips.
  3. In a separate bowl, whisk together the wet ingredients.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  5. Fill the muffin cups about ⅔ full and sprinkle extra chocolate chips on top if desired.
  6. Bake for 18 to 22 minutes until a toothpick comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
